Sourcing the Best Ingredients

We begin by sourcing fresh lemons and ginger from our local market, ensuring that only the best seasonal produce is used. The lemons are hand-squeezed to extract their bright, citrusy juice, while the ginger is infused to impart a subtle spiciness, adding depth and warmth to the drink.


The Art of Fermentation

To achieve a delicate sweetness, we rely on fermentation. Seasonal fruit is combined with sugar and left to ferment for at least six months. During this time, the natural sugars break down, creating a mellow, complex sweetness that enhances the overall balance of flavors. This fermented fruit extract is then blended into the ginger-infused lemon juice, adding just the right amount of pleasant sweetness without being overwhelming.
